From time to time I find myself just reminiscing on food I had as a kid, things I never really think of making because it seems so...already done. Been there done that...no point. On this afternoon I decided to whip up more of that ever so amazing homemade mayo (with a little red wine vinegar this time) and I set out to give myself a rockin lunch. I made the mayo first because I was determined to whiz it by hand this time, (without it breaking) next came the dummy moment... uh what do I put this on? The answer lied in my freezer, I had creole seasoned ready made chicken and in the fridge lightly pickled veg. like peppers and onions, a little shallot extra creole seasoning and hard cooked eggs, all on a home made roll? Yee hooo! Holy wow this was not the same old same old. The aromatic floral notes from the olive oil just made this dish SING. Although I'm not much of a fan of the taste of olive oil normally it really did make this a home made wonder food. Had I just cracked open the Hellman's it would just be like every other lunch box chicken salad. Easy, satisfying and well deserved treat.
