From time to time I really crave old-school classics. When I was a kid I ate egg salad that was, well it was good but it was pretty much a smooshy deviled egg on some bread. Although I do believe deviled eggs are pretty hard core delish, from time to time I get to thinking I can re-interpret some things now and then. I've seen lighter egg salads before, I've seen plenty of hors D'oeuvres with egg and salmon combined the wheels went turning and I threw this together. Recently I made an absolutely phenomenal salad that combined eggs, beets, smoked salmon and a mustard vinaigrette, the flavors were so earthy and absolutely pleasant I wanted to somewhat relive the moment. See ya later funky egg salad, Momma wants something a little new. Although I used less than perfect bread, the combination of eggs, capers, salmon and homemade pickles made this a remarkable snack. It would be nice served on crackers, toasts or even a crusty roll for a lunchtime treat. A crusty roll sounds ideal, but in a pinch whatever bread you have around works.
Using a dressing fairly identical to the one used on the roasted beet and potato salad (same dressing different mustard pot) I mixed up some hard cooked eggs, tossed in some capers, salt and pepper and that was it. Oh yeah, and HOMEMADE pickles. You really can not get anything more delicious. A little old-school, but with great smoked salmon, a simple mustard vinaigrette and homemade pickles, anything can be done up in a split second and it will be delicious.
Egg Salad:
4 hard cooked eggs
4 tablespoons mustard pot dressing
2 tablespoons capers
2-3 tablespoons chopped shallots or onion
salt and pepper
1, 4 ounce package Smoked Salmon
Whole Wheat toasts
Combine ingredients in a bowl. Add salt and pepper to taste. You can serve the salmon chopped finely in the egg salad or on top. Can be served cold or room temperature.

I made my fridge pickles with hardly any sugar this time and added a few teaspoons of dill. If you do not have homemade pickles on hand a really good quality dill slice will work.
